Cabinets designed to extend food holding times

Keeping hot food hot and cold food cold is fundamental to safe food handling. Keeping bulk food or plated meals hot is a necessary part of efficient kitchen operations and a fact-of-life with buffet and banquet meal service.

Cold-side holding is a no-brainer. If ingredients or meal components are served cold or at room temperature, they must be kept at refrigerated temperatures to retard spoilage, maintain texture and a fresh appearance. Hot food holding is more of a challenge.

While cook-to-order production, immediate plating and instant service-at-table is the ideal, the reality is all batch prepared foods, deli or buffet service items and banquet meals must be held and kept hot for extended periods. Fortunately, there is a new generation of holding equipment designed to hold foods at temperature and maintain product texture and eye appeal.

There is a number of equipment products designed to help hold food, including pass-through heat strips, lamps, holding drawers, hot and cold tables, and various combination units used to cook and hold or warm and serve. Most holding cabinets have wheels or casters for basic mobility. Banquet carts or “mobile heated cabinets” used for hospital and correctional tray delivery always have heavy caster, plus bumpers and secure door latches designed for easy movement between floors and even remote delivery by truck to satellite serving facilities.

 

The Real Challenge with Hot Food Holding

While safe food holding is a well-documented issue of temperature maintenance, there are different theories and solutions offered for the best way to hold different foods HOT, for extended periods, from the perspective of maintaining their flavor, color, texture and character. Humidity or vapor pressure has been long recognized as a factor in maintaining hot foods. The challenge is that different foods require different environments to maintain optimum moisture levels and appropriate texture. Fried product and bakery goods require a different hot holding environment than meats or steamed vegetables.

Some hot holding cabinet manufacturers incorporate a water reservoir and controls that can measure humidity and add moisture to the compartment, based on the needs of the product being held. The goal is for inherently dry products to stay dry (and crisp), while high-moisture products stay moist. With their low-end temperature range and accurate humidity control, these models can also be used for proofing, when not holding foods.

Some manufacturers add small fans or air channels to move hot air to maintain uniform temperatures from top-to-bottom. Other manufacturers strive for gentle still-air heating throughout the case, to avoid the desiccating effect of moving air. When faced with the challenge of holding and transporting different products, split cabinets with separate heat and humidity controls will help tailor the environment.

 

Alto Shaam, Menomonee Falls, Wis.

Alto Shaam created the slow-cook & hold oven category based on the gentle heating provided by their Halo Heat technology. It didn’t take them long to migrate that technology to holding cabinets and later make those cabinets part of an integrated cook-hold-serve system. Alto Shaam’s Halo Heat uses electric thermal cable running through the bottom and sides of their cabinets to provide gentle radiant heat that preserves a product’s natural moisture; without hot or cold spots, fans, hot air movement or added humidity. Halo Heat technology is used in their stationary and mobile hot holding cabinets, even their drawer warmers.

Alto Shaam also has rack-loaded roll-in holding cabinets designed to be matched with their Combitherm oven-steamer and blast chillers, to provide a complete cook-chill production system. Foods can be cooked in their combi and held in their cabinet or rapid chilled, using the blast chiller. Those refrigerated foods can be stored for up to five days then reheated in the combi and transferred to the holding cabinet just prior to service. They even offer an optional control and software documentation package that can monitor product temperature and provide the records needed for Hazard Analysis & Critical Control Points (HACCP) program documentation.

 

Cambro Manufacturing Co., Huntington Beach, Calif.

Cambro isn’t a name you normally associate with plug-in equipment, but Cambro has introduced their line of Ultra Pan Carrier and Ultra Camcart H-Series mobile warming cabinets. These insulated cabinets have door-mounted plug-in electric heating units designed to keep contents at 150-165*F and they will recover-to-temperature in three minutes, when the door is opened. These H-Series transporters have a tough polyethylene shell and door, filled with thick polyurethane foam insulation which can maintain safe temperatures for hours and stays cool to the touch. Their H-Series transporters are available in two sizes, a single Ultra Pan Carrier and a double Ultra Camcart with 5-inch casters.

A related product, their Camtherm Bulk Food Holding Cabinet, earned National Restaurant Association (NRA) 2008 Kitchen Innovations recognition. These models use energy efficient thermoelectric technology for either heating or cooling in the same cabinet, with no compressor, heating coil or humidifier. Currently only their H-Series mobile warming cabinets are ENERGY STAR qualified.

 

carterCarter-Hoffmann, Mundelein, Ill.

With a first name like Carter, you would imagine they would know a bit about carts and holding cabinets. You would be right. Carter-Hoffmann offers a broad line of heated holding cabinets and transport carts including specialty patient tray and correctional deliver carts, banquet support equipment, plus tray makeup and cafeteria serving equipment. Most recently they earned NRA 2008 Kitchen Innovations recognition for the design of their new EnduraHeat bulk food transport carts.

These insulated hot food holding cabinets have a unique bottom-mounted heat retention system that allows them to be charged (heated), then unplugged, moved or left parked for up to two hours, while keeping food at a safe serving temperature. This patented heat retention system saves energy, frees users from the need for an electric outlet or the use of canned fuel. Not surprisingly, these mobile holding cabinets qualify for ENERGY STAR status.

 

eagleEagle Group, Clayton, Del.

Eagle offers a full line of Panco transport holding cabinets for heating and proofing. These all-aluminum cabinets can accommodate both full and half-size sheet pans and feature their patented Temp-Gard? airflow design for even heating; and exterior controls with digital temperature display, adjustable temperature setting and humidity control in proofing models. Heavy duty bumpers, polymer swivel casters and a bottom-mounted 2000 watt power pack that is removable for easy cleaning, are all standard. These carts are available in full or half-size models, with a variety of door combinations, including see-through windows.

Recently Eagle expanded their Panco Line with the addition of cook-and-hold cabinets. These cabinets are stainless steel, inside and out; and can cook at temperatures from 100- to 300°F then hold product at 145- to 200-degrees F for up to 24-hours. A “smart” control panel can be set to cook-to-time or a temperature probe; and is programmable with up to 16 presets.

 

Hatco, Milwaukee & Sturgeon Bay, Wis.

Want to merchandise food as well as keep it warm? Hatco probably offers more ways to keep food warm than any other supplier, including their line of Fla-R-Fresh® holding and display cabinets. The newest addition to their Fla-R-Fresh Line are stylish table top models with Euro-design curved corner posts and a choice of six designer colors.

Controlled moisturized heat keeps food fresh longer and tempered glass sides and doors make sure that great looking product is in full view of patrons. Four of these models are available with either stationary or revolving racks that accommodate half-size sheet pans and add some movement to the display. Shatter resistant incandescent lights illuminate the holding areas and user-friendly controls make it easy to tailor cabinet environment for optimum product holding. Their Flav-R-Savor Line also includes more conventional caster-mounted portable holding cabinets, as well as a host of specialty holding and display equipment.

 

InterMetro Industries, Wilkes-Barre, Pa.

InterMetro is probably best known for their shelving and storage systems, but with the introduction of their C5 Line, they became a factor in holding cabinets and transport carts. The C5 Line includes heated holding & proofing cabinets, heated holding cabinets, pizza holding cabinets and their new 3 Series cabinets with Insulation Armour?. The award winning 3 Series has a distinctive Metro-red plastic sheathing wrapping the sides and top of the cabinets. This cool-to-the-touch Insulation Armor helps retain heat and protects employees from contact with hot cabinet surfaces.

While most holding cabinets have solid metal-clad doors, many Metro models are available with either solid insulated or clear polycarbonate Dutch or full length doors. See-through doors make it easier to keep track of product, without opening the door and releasing much of the heat. Split Dutch doors loose less heat when removing trays, pans or plates.

 

traulsenTraulsen, Fort Worth, Texas

Best know for their cold-side expertise, Traulsen has applied some of that insulated cabinet experience to hot holding cabinets and even rethermalization ovens. The Traulsen line of insulated banquet and transport carts has models designed to accommodate 90-150 covered plates; and models with universal tray slides that can hold either steam table pans or larger 18-by 26-inch sheet pans.

All Traulsen banquet and transport carts are Energy Star qualified and boast 300 Series stainless steel, plus: welded frame construction, heavy duty casters, welded tubular steel push handles, full-perimeter bumpers and recessed control panels. Those dial controls allow you to set holding temperatures from 135- to 190-degrees F; and some models are equipped with a top-mounted fan to circulate warm air inside the cabinet.
